Word appeal: Sutterby shows how to write an appetizing message on cakes

Happy Birthday. Congratulations.
These are simple and common messages seen on cakes in stores and at parties. The photo below shows a more intricate cake message.
Regardless of how simple or intricate, the words can sometimes ruin the cake's appearance, says Rebecca Sutterby, owner of Sugar Creations.

The owner of Sugar Creations shows off her work each month on Good Morning Kansas. This morning she brought a wedding cake that our morning anchors found too appetizing to pass up.
"Personally I don't think anything can ruin a cake faster than some sloppy handwriting," she said.
She suggests using patterns to help keep the style of cake calligraphy consistent and keep lines straight. Those wanting to try it at home, should design the text on their computers and print it out, she said.
"What I do then is just take a straight pin and put the pattern on top of a block of Styrofoam and then I'm going to go along the letters poking little holes," Sutterby said. "And what that does is that leaves bumps on the back (of the paper)."
Take that bumpy paper and lay it on top of the cake or wrap it around. Then, rub it firmly.
"You have little guidelines to follow then," she said.
Fondant frosting, a firmer substance used to coat cakes, works well, but it has to fresh or it won't retain any bumps.
Buttercream frosting would also work, she said.
Sutterby uses a frosting applicator with a small (number 1 or 2), round tip to write on her cakes.
If you make a mistake, she says all you have to do is let the icing set for a few minutes and use a sharp knife to scrap it off.
